The same reason he's portrayed as Black, East Asian or other ethnicities.  It's what the artists were familiar with.  It has rarely been claimed He was any other ethnicity than a Middle Eastern Jew.

Who gets classed as White can be very interesting.  A light complected Argentinian of 100% European heritage is considered as Brown as a Honduran of mostly Native heritage while a Spaniard from Madrid with a dark complexion is White.  An Egyptian  actor, like Omar Sharif is Brown while Sicilian-American Al Pacino is White.   Jesus likely looked like most people from around the Med.

As for modern Jews in general, like Asians, they generally have White privilege.  Indeed, they're about as White as one could possibly get.  Anti-Semitism is only bad if it's by right wing extremists.
