Been on a low carb ketogenic diet for the last month. Decided to make these keto friendly jalapeno poppers for lunch today. They were damn good, Growing up we used to make them breaded and fried, which are also really good. There is a variation I want to try called "atomic buffalo turds" (yes really). You cut the large end off the jalapeno, clean the seeds and membrane out, then insert a little smoky sausage and cream cheese into the jalapeno. Then wrap them in ground sausage or bacon, and smoke em.
