Dame Karmen Posted January 7, 2008 Posted January 7, 2008 Hi Folks, My favorite food of all time and since forever, is potatoes! Almost any way,shape or form, I LOVE potatoes. Mashed, baked, roasted, panfried, raw, etc.What are some of your favorite potato recipes/meals? I especially love simple potato pancakes: - grated raw potatos - chopped onions- salt and pepper- egg - small bit of flour just enough to bind them Fried ... topped with butter, sour cream, green onion and fresh cooked bacon bits Sometimes I vary the ingredients and add something else but really enjoy the simpleold fashioned ones like Mom used to make. I started craving some scalloped potatos earlier (like mine with bacon! NOT ham! )so I was just browsing for recipes - and see many use cans of soup EEK ... I have never knownthem to be made with cans of soup (OR cheese for that matter unless called au gratin)I guess Mom's recipe that I loved was all done from scratch and basically a white sauce as the liquid, which is how I've made them. As before, I've gotten creative with ingredients, but still like the simple made from scratch recipe best (no cans of anything and no cheese) - Sliced raw potatos- chopped or sliced onions- bacon- milk and a bit of flour to thicken as baking (the white sauce stuff )- salt and pepper
Timo Posted January 7, 2008 Posted January 7, 2008 I think I found my pinnacle concerning potato wedges on the new year's day meal - Rosemary wedges. Effectively: 1. Wash and cut your potatoes (starchy, small-medium) into wedges. Put into a non-reactive bowl. 2. Combine 2-3 stalks of FRESH rosemary, discarding any tough parts, salt and black & white pepper (generously but to taste) in a mortar, grind until the result looks like deep green oily sand. Toss the mixture into the bowl. 3. Drizzle some olive oil over the potatoes and throw them around in the bowl so that they become uniformly coated 4. Put them on a baking pan and bake in 220 deg. C until they look yummy. Enjoy.
snafu_72 Posted January 7, 2008 Posted January 7, 2008 I made a nice potato soup for Christmas this year. It was simple and everyone really enjoyed it. 1. Wash, peel, dice and boil 6 potatoes until fork tender.2. While spuds are bathing slice and dice celery, onions, carrots and leeks.3. Saute diced veg in 1/2 butter and 1/2 EVOO until tender4. In pot used for spuds add enough chicken stock to cover spuds and veg5. Simmer for 30 minutes and add salt and white pepper to taste6. Just before serving use potato masher until mixture is pureed (you could use an electric device but I did not)7. Add 1 pint cream and simmer until warmed8. Serve with crusty bread and top with grated Parmesan cheese There wasn't enough left to save until the next day! :P
SALADIN Posted January 7, 2008 Posted January 7, 2008 Sorry no recipes, but truly liked the tortilla e patatas (potato omlettes)they had in many places in Spain as a snack.A good mix of carbos,vitamins and protein and yes cholosterol. Good way to start the first week of 2008with a POTATO thread then in potoatos honour, and I didn't even know about this You got me Googlin' away ... and I found totally great museum to check out:http://www.potatomuseum.com/ .... as a preschooler, living on a farm, one of us kid's jobs was picking the potato bugsoff the plants (looks like they might actually have been beetles) We also helped plant 'em and pick 'em. mikegolf Posted January 16, 2008 Posted January 16, 2008 British Marmite potatoes. from what I was able to gather, you make small 1 1/2 inch balls from potatoes, then fry them in goose fat, then toss the finished spuds in a light coat of Marmite. Delicious on dinner nights!
Dame Karmen Posted January 17, 2008 Author Posted January 17, 2008 (edited) Speaking of British ... and yes, I've had the Marmite experience (like Vegemite better though!) ... from the same British foster family that introduced me to one of my all-time favorite potatoes dishes ... BUBBLE AND SQUEAK!!! I just use leftover mashed potatoes and cabbage, and frying it up with onions and bacon, salt and pepper, and letting it crisp. I love an 'almost burtnt" crisp taste YUM Bubble and Squeak Ingredients450g/1lb potatoes, unpeeledsalt and pepper70g/2 1/2 oz butter250g/8oz cabbage, shredded3 tbsp water3-4 tbsp sunflower oil1 onion, chopped DIRECTIONSCook the potatoes for 25 minutes in a pan of lightly salted boiling water, then drain, peel and dice. Place them in a bowl with 55g/2oz of the butter and mash until smooth. Season to taste with salt and pepper. Meanwhile, place the cabbage, water and remaining butter in a large heavy based saucepan and cover. Cook gently for 10 minutes, or until tender. Mix the cabbage and mashed potato together and season with more salt and pepper. Heat half the oil in a frying pan. Add the onion and cook, stirring occasionally, until softened. Add the potato and cabbage mixture and press down with the back of a wooden spon to make a flat, even cake. Cook over a medium heat for 15 minutes until golden brown on the underside and place on a large plate. Add the remaining oil and cook again on the other side for 10 minutes. Roast at a mediun high heat., serve with crab cakes covered with shredded kumera deep fried....But only in spring and autumn at a cafe overlooking a beach in the company of a special friend... With rocket and grated parmasan salad, Knowing that this is just lunch, not foreplay Chablis Heavenly!
