Typhoid Maxx's "Lucifers Kiss" Hot Sauce Ingredients: 3x pallets of Scotch Bonnet Peppers (roughly peppers 3-4 per pallet) 7-8 Tomatos NO LESS than an entire large bulb of garlic, crushed Salt Conserve powder,packet, 5g (I use Natrium-benzoate, Sodium-benzoate should be fine) Method: Remove stem ONLY from bonnet peppers, and put all in a large pot EXCEPT the crushed garlic, cover with boiling water. Bring to boil, 30-40 minutes...point is to liquidize it. Use hand blender if necessary, ADD garlic no earlier than than 15 minutes before end of boiling....top up with boiling water during boiling, to maintain desired consistency of sauce. Makes 1.5 litres, or just over a third of a US gallon as laid down. This one lends itself well to being modified with additional ingredientes, at will, to alter taste. Note: With people afflicted with an average to moderate constitution, preparation can be....problematic. Personally, the above is a base - I'll regularly make like above, but depending on the mood - and this can be added later - I'll mix in liquefied onions/green onions, more garlic paste, mustard, and oils...preferably extra virgin olive oil....white pepper and tumeric.
